Sourdough Discard Scallion Pancake

Ingredients
- 3/4 cup (170g) sourdough starter, unfed/discard
- 2 tablespoons (28g) water
- 1/4 teaspoon table salt
- 1 teaspoon baking powder
- 2 scallions, white parts chopped finely and green parts sliced about 1/4” wide
- large handful of fresh herbs, coarsely chopped (cilantro, parsley, dill, tarragon, chives, etc. …)
- vegetable oil, for frying
Method
- Mix everything
- Pan fry, on medium high heat.
- Serve with whatever
